A question....

Hi there...newbie to lj here and to this comm....loving the look of it though!!!

I have a question...I have recently become vegan after being veggie for years and am trying our various recipes for cakes....the only problem I have found with them is that when I take them out the over (say for cupcakes) they have risen to the top of the case or over but after awhile of being out of the oven they have all shrunk down!  They taste perfectly fine but seem to do this weird deflating thing which is a bit annoying!!!

Any suggestions as to what I am doing wrong will be gratefully received :) x

I've had that happen, I think usually it's because of taking a cake recipe and converting it to cupcakes, they don't all work for that. I don't know what exactly will fix those cupcakes specifically but I've never had that problem when using cupcake recipes from Vegan Cupcakes Take Over the World, those recipes are way bomb, and they also work as full size cakes.

It was a cupcake recipe from Veganomicon which I think is written by the same folk who did Cupcakes? I think I may invest in that anyhow :)

As mentioned, it could be a simple issue of the recipe not converting to cupcakes well. Annoyingly, the symptoms you're describing can have a range of causes - it could be overbaking (which I suppose is the most logical given that cupcakes generally bake a bit quicker than a cake) to a too-hot oven, so you might just have to do a bit of experimentation to see if you can pin point the problem.

Mmmmm you may have hit on something there as I was baking them on the fan oven setting....which I guess heats up more...if I could work out which one was the normal oven setting on the dial which has about 20 different icons on it that might help!!!

Do you have the book Vegan Cupcakes Take Over the World? They have a troubleshooting section which covers topics like why your cupcakes can sink. Here are the reasons they list, in short:

1) Too cold oven/too hot oven/oven not preheated enough.
2) Opening the oven door before it's time/removing cupcakes from oven prematurely.
3) Too much liquid/sugar/fat in batter.
4) Overmixing.

They expand on these to give you the ins and outs in a paragraph or two after each point. If you're looking to make vegan cupcakes, you should really pick up this book. It's a good one.

I dont have that but I am thinking of getting it!

I think it might be the oven....Im fairly new to it and its a bit random sometimes...although I did heat it up first but that may have made it too hot!!
